Examples include E2S3 of Breaking bad and of course American psycho.

There are several reasons. The first is that axes are generally intended for rough use, such as chopping through a log, splitting wood, etc. A sharp edge means a thin edge, which means a relatively delicate edge. By thickening relatively quickly you get more metal in the blade which makes it able to withstand the force of a swing of the axe.

Another issue is that if you see an axe in a movie or television show it is most likely going to be a prop made of rubber or latex foam. They can’t have actors running around with weighty weapons or sharp blades for safety reasons. It is only a matter of time until someone is cut, someone accidentally chops their foot, etc. You just aren’t going to get a firm, razor sharp edge out of rubber or foam.

It’s a lot of effort to keep a movie prop sharp that mostly just makes the prop more of a hazard to the actors on stage. Like, nobody *actually* wants the prop to be able to hurt someone.

If an axe was as sharp as a kitchen knife, I’d be afraid of the blade breaking when it came down on a piece of wood rather than actually cutting through it. The thicker the metal, the sturdier it is.
