Couple years ago we went up to Santa Rosa, CA for a beer festival and found an AirBnB in Sebastopol that was a farmhouse with some studios, the lady that ran it left us some fresh eggs from her chickens.

We were driving down to the coast and got some breakfast, there was a market that had an array of really nice smoked salmon. Picked up some local cream cheese too.

The omelets I made from those were fucking amazing. The yolks were a beautiful orange color and the salmon and cream cheese just melted in your mouth.

Then we opened a cupboard and found a “rice krispie treat” in a box with some psychedelic artwork, cut a small slice and whoo boy that was a ride.

Anyway long story long the more orange color seems to be from smaller farm raised chickens fed by hand rather than mass produced stuff you find in the grocery store.

My hens yolks darken when they get more protein. In the winter they get yellower but if I give them a handful of meal worms each day by the following week they’ll darken up again.

You can also add specific foods to their diet that will change yolk color.

For me the quality is less about the color and more about the texture. A good solid shell, a yolk that stands up and egg white that doesn’t run like water.

They add in paprika/tumeric to the feed. The color of the yolk doesn’t determine the nutrient quality either.
