When you open it the cold air inside pours out and is replaced by hot air in the room. The hot air is rapidly cooled by the cold stuff inside and when you close the door the air keeps being cooled and cold air shrinks. Lower pressure inside than outside makes it hard to open the door again. Over time more air leaks in the fridge and the pressures equalize so after a while it is easy to open the door again.
