eli5 why clouds don’t disperse and have some structure to them

I was on a flight recently with a window seat, looking at the clouds underneath they did not look too far, but all the little wisps and shapes seemed to be almost solid shape. I was watching them closely for ages as we were descending and getting closer to them and they definitely had a structure to them. I know they are obviously not solid, but if there are winds up there why would they not be dispersed? Even if they were moving with the wind so their speed is relatively 0 to it, would the turbulence of 50+mph winds not disperse them?

The individual bits of cloud droplets are constantly moving, forming, and dispersing. The cloud is actually very dynamic, particularly the puffy ones (cumulus).

However…the conditions that make the cloud visible (temperature, humidity) stay fairly stationary, so the visible boundaries don’t move that much over short periods of time.
