eli5 why do cider mill donuts “soak up” the cinnamon sugar coating after a few days?

Every year my family goes to the cider mill and picks up some spice (cinnamon sugar coating) donuts. After a few days even if they’re packaged up well they cinnamon sugar is always gone from the outsides of the donut.

Does it get soaked inside and if so, why does that happen? I was wondering if it had something to do with the moisture of the donut dissolving the sugar or if it’s something else entirely.

The powdered sugar is very very dry.

Over time it will equilibrate with the environmental humidity levels by absorbing moisture. As it does so, the finely powdered sugar has a huge surface area, so will start to dissolve in the moisture it absorbs, and form a syrup. This is what gets absorbed into the porous donut dough.
