Cars use gasoline but jets use something closer to diesel, maybe kerosene, that’s less combustible. Wouldn’t they need a _more_ volatile or explosive fuel to get the most thrust for performance?

Diesel engines are always more efficient that petrol engines. Which means less fuel consumed per kilometer, which would imply less weight of fuel carried, which automatically means even more miles per gallon.
