In: 312 9 Answers ActiveNewestOldest Anonymous Posted January 3, 2023 0 Comments If you’re talking about the textural differences it’s because the muscle fibers of fish are laid out differently (short fibers overlapping, which makes the meat flaky) which is more efficient in the side to side motions required for swimming.
