Eli5: Why do fish have different “meat” in comparison to land animals?

All animals have different types of meat, whether seafood or not – the meat of a halibut versus a salmon versus a swordfish versus a lobster are very different from each other. As are the meats of land animals, like cows, pigs, chickens, and crickets – all very different types of meat.

The thing that seafood has in common is that it lives in water (sometimes salt water) and in colder conditions than most land animals – this makes it sometimes go bad more quickly at room temp and means that proper storage is essential for seafood.
