Eli5: why do our brains get confused and sometimes write something we’re saying or say something we are thinking that’s not what we meant to say?

We DO. It does happen-and you can actually make it happen on purpose to partly understand how-pyshcologists figured out a test called the ‘Stroop’ test (named after the inventor of it).

He created a simple experiment to demonstrate how common embedded associations in our mind, and how our brain can experience overload or conflict, resulting in the sort of thing you mention.

It also helps prove the existence of our subconcious mind, that is, that there is a lot of processes and knowledge and things going on beneath the surface which we are not aware of when we think, talk feel, or act. You can try the test on a friend if you like so its easier for you to observe, whereas if you do it to yourself, it may be less obvious.
