The intriguing thing is why they choose soldiers rather than other occupation like a scientist, a model, a businessman or a doctor which could theorically attract a wider range of victims?

They need to have a career that explains why they are not available to actually meet in person, and also why they aren’t dating locally, and why they’re lonely. So any position where they could plausibly be deployed overseas is good (being overseas also gives you reasons for needing cash). Also, it will help the scam if they can find someone with a lot of existing sympathy and respect for someone in the military (which is definitely a thing) . And it’s a broad enough type of employment that you wouldn’t need to fake too much job knowledge.
