Eli5 Why do some foods get hard when they go stale and other foods get soft?

Stale cake gets hard. Stale graham cracker soft. Why is that?

It’s all about moisture. Cakes are moist, so the water in them evaporates and they become dry. Crackers are dry, so they absorb water from the air and become soft.
