Eli5 : Why do some genes (like skin color) mix and shade upon inheritance while some don’t (like eye color) ?

For people saying eye colors mix – yes and no. Blue eyes are a genetic mutation and both parents need to have this trait (in their DNA) for it to be passed down or else it won’t. Same with red hair. From what I understand , there’s no passing down any kind of genetic mutation (blue eyes, or red hair) if one parent absolutely doesn’t have the genes for it
