If someone is about to get hurt or gets hurt people put their hands over their head/face. Is this a gesture we all do? If so why?

you do it because you saw countless videos of people covering their mouth in similar situations. People who record those videos do it because that is what their viewers expect.

people with different cultural backgrounds respond differently. Many in older generation of American males would say “ouch”, and/or twist their face like they are in pain. I think I have also seem some really old movies where people cover their eyes or look away half-heartedly.

The easiest connection to make would be that its to stop us from vomiting when seeing something gross/scary

It could be related to how recirculating CO2 in your breath can regulate your breathing, calming you down. Hence why people used to breath into paper bags when they were hyperventilating. I don’t believe they teach that now though, so i could be wrong.

No, it isn’t. Gestures and reactions are dependent upon the culture we are exposed to, growing up, or via the media we watch. For example, the “wave your hands in front of your face to prevent yourself from crying” gesture is not universal. It largely comes from western movies (romantic comedies, and the like). You almost never see people from non-western countries naturally make that gesture unless they have been exposed to a lot of western media.
