[ELI5] Why does boiled water taste different from tap water?

The water in your tap will contain dissolved substances. These may be residual quantities of the chemicals used to purify water, or they may be minerals naturally present in the water.
Boiling removes those sustances. if you see a white scale in your kettle etc that comes from the minerals that were naturally dissolved in the water before it was boiled
