Eli5: Why does coffee brew in a French press or coffee machine, but tea steeps in a bag?

Why not a coffee bag? Or a tea press?

I basically tea bag brew coffee while camping using a coffee sock infill with coffee and submerge in hot water for five to ten minutes.
