[ELI5] why does letting Dough sit for an hour make it better to use in baking?

If it’s a yeast dough the yeast (a fungus) will eat sugar/starch and produce CO2 in the process. That forms a lot of bubbles wich make the dough lighter and more fluffy when baked.
