It’s your saliva. It does two things somewhat at the same time. The first being that it is mildly corrosive, it helps to break down food when you eat, so a very small amount of metal is dissolved and sent to your taste buds, so you taste the metal itself. Second, your saliva contains electrolytes that help transfer electrons from the metal to your mouth, that’s likely the “sharp, tingly sensation” from some metals. I bet they all taste slightly different.
