Trypsin is a digestive enzyme in the small intestine where it cannot harm you as it breaks down foodstuffs. The linings of the gut protect the gut as it passes through and the enzyme remains active in stools. If left on your anus which lack that protective layer, it just keeps up it’s digestive actions there.
