Things spoil because microorganisms grow on and eat them, and in the process of doing so produce toxic substances.

Water by itself is not something microorganisms can live off of, so they will not survive, much less grow in it. If there are suitable nutrients dissolved in the water, then it’s another story.

It wont spoil, as it is “simple” chemical compound, but when water becomes stale, and a lot of dangerous bacteria and parasites can be found in there.

So we could call that spoiled water

How do you define spoil? If by “spoil”, you mean harmful bacteria take up residence making the material unsafe to consume, then water can absolutely spoil.
