Sped up = shrink down wavelength to fit all the digital information = higher frequency = higher pitch

Slowing down is the opposite.

Sound is just a wave afterall. It has a frequency. In a recorded voice you obviously have so many different sound waves with variable amplitudes and frequencies, and you affect them all by changing the playback speed.

The way we perceive sound is based on frequency – the more sound waves per second (or Hertz), the higher pitched the sound. When you speed up the video, you’re increasing the speed of it, which means increasing the frequency of the sound waves (faster sound needs faster frequency), therefore upping the pitch.
