It’s uncommon and doesn’t react/oxydize. You can’t use iron as a currency, it’ll just rust away (plus it’s pretty common). You certainly can’t use bananas. But gold will essentially last forever, it’s pretty and it’s relatively rare, so it works well for the purpose of storing monetary value. Similar thing for diamonds and other precious stones, but those aren’t malleable so you can’t make them into coins and similar stuff.
