For multiple reasons:

Scarcity

It’s beautiful

It’s used to manufacture tons of things

It was easy to turn into coins and jewelry because it’s soft

It’s uncommon and doesn’t react/oxydize. You can’t use iron as a currency, it’ll just rust away (plus it’s pretty common). You certainly can’t use bananas. But gold will essentially last forever, it’s pretty and it’s relatively rare, so it works well for the purpose of storing monetary value. Similar thing for diamonds and other precious stones, but those aren’t malleable so you can’t make them into coins and similar stuff.

It is a representation of real world value. Gold, because it appeared to be unique and pretty, was a stand in for previous work. You built that bridge = you got a gold coin.

People keep mentioning how it looks pretty and it doesn’t oxidize but I don’t see a lot of people talking about the use of gold in microchips and other circuitry. Gold is very useful for high-tech devices.
