Eli5: Why is it that as a kid, we generally avoid enriched flavors but then grow to like them in our adult years?

For example, I used to despise the taste of coffee and now I drink black everyday. Or same thing with dark chocolate.

Kids have more taste buds so bitter things tase really really bitter to kids. Your taste buds die out as you get older and you are able to enjoy more butter and spicy flavors. Adults have about 1/3 the number of taste buds as children

Kids have different taste buds. They have more clusters of buds that detect sweet. It’s thought to be so breast milk would be more appetizing.
