Depending on the vegetables, the liquid can extract high volumes of proteins. Protein reduces surface tension and creates lots of bubbles in a liquid.

Fun Fact – the liquid from canned beans can be so high in protein it makes a great egg-white substitute for vegan baked good. They call it “Aqua Faba” (literally beanwater).
