Because making you believe you need to consume a complex and perfectly balanced diet is a multi billion dollar industry.

We are simply worse at living in survival mode. Our brains are evolving beyond our physical capacity.

It used to be that loving in a region meant that you and all of your ancestors ate the same regional food.

Now no longer the case (in developed nations). So we eat things that aren’t the best for us, and make up for it by trying to be super healthy.

2 centuries ago one was expected to live DRASTICALLY less than we live today. We’re evolving too fast.

ETA: unless you’re religious. Then you’re just being punished by god(s)

All evolution “cares about” is us surviving until we can have children – which we can do in sixteen years, give or take. A terrible diet can keep us alive that long, easily. We might die in our 60s instead of our 80s, but by then we’ve had so many chances to pass on your genes it… doesn’t matter?

Our ancestors died a lot younger. About half of humans that have ever lived never saw thier 20th birthday. You don’t have to worry about eating healthy when you don’t live long enough for old age problems to be a problem.
