Because we eat different parts of each plant – sometimes those are the parts of the plant that grow underground. The underground plant parts that we often eat are either roots (carrots, turnips, etc), tubers (potato, jicama), or rhizomes (ginger).

sometimes it’s the leaves, sometimes it’s the stem, sometimes it’s the roots.
