What are the benefits of having more displacement vs more cylinders and the configuration of the cylinders.

For example:
3 litre inline 4 cylinder vs 3 litre inline 6 cylinder vs 3 litre V6.

Atleast for smaller displacement, engines with more cylinders are able to rev higher, such as Hondas 90s CBR250RR (250cc Inline 4) which could rev to about ~23,000 RPM, and since it revs higher it can make more horsepower since HP = (Torque * RPM) /2
