Saw different versions: like Enkidu’s death, some say it’s illness, some says it’s the gods (directly) that killed him. The immortality, some says it’s an underwater plant, some says it’s the “stay awake for 7 days”, and something involving a potion? which a serpent stole… I’m confused which one is right.

The epic of Gilgamesh is from a time when travling story tellers were the way stories spread. Back then, the idea that a story had 1 canonical version was insane to people. So there are multiple versions of it. likely each person who told it had their own version, only some of which got written down. of those written down, we only have fragments.
Most historical works are like this. There is no cannonical version of Aurthurian lore either, The Oddysey has multiple versions, etc. Its only really after the adoption of the printing press that fictional stories began having a single correct telling
