Saw different versions: like Enkidu’s death, some say it’s illness, some says it’s the gods (directly) that killed him. The immortality, some says it’s an underwater plant, some says it’s the “stay awake for 7 days”, and something involving a potion? which a serpent stole… I’m confused which one is right.

None is “right.” It’s one of the oldest stories ever written that we have access to. Multiple versions existed back then since there weren’t bookstores, everyone had their own version they would tell their friends and they eventually got written down. In the modern era, it was composed and translated from multiple broken up tablets that look like the one in the wiki article https://en.m.wikipedia.org/wiki/Epic_of_Gilgamesh.
Different versions exist as a result and none is correct. This is one of the beautiful things about this story!
