Caps specifically refer to international matches. So like Manchester vs Tottenham would not be a cap.
And it comes form back in the day with international matches were not as common and players would get commemorative caps for participating.
Caps are “Appearances for the national team”, and refers back to the days when they would literally give out caps (hats) to players for every game they played in.
