In ear monitors are better for live performances as they’re commonly custom made and seal for any outside noise.

They’re also good for standard listening for convenience

If you’re a musician, it’s a good way to ensure noise isn’t getting in the way of hearing what you need to hear, and going for monitors is to ensure you have the most accurate sound returned at as low a latency as possible – so the musician can react to what they need to hear, as they need to. Ordinary ear buds will have a biased sound, and may not have very good latency, and headphones are unwieldy, especially if you are moving about, or, for example looking down at a guitar.

It it’s studio work however, it can depend on what’s going on, but for the studio staff, the producers, etc… Its likely to be all the above to some degree, not one audio source or the other.
