How are adverts from today inserted into old podcasts?

Edit: how’s it done automatically? I’m not trying to learn I’m just intrigued

I.e. how come podcasts from 2018 have adverts for current products?

It is not that different from how up to date adverts are inserted into old web pages. When you download a podcast episode the server will dynamically insert various advertisements into the recorded episode at suitable places. The server is basically editing together the episode as you are downloading it. Of course if you listen to an already downloaded episode at a later date the advertisements will still be the same as before. But it does give you a bit more relevant adverts. The server can also use various other information to decide which adverts to inject into the episode. So you typically get regional advertisements as well. You might also get adverts related to your podcasting software or the phone model you use as well but I have not seen this.

By pausing the playback of what was recorded, then playing the ad, then resuming the playback of the original podcast.

The old podcasts are just audio recordings. You take the original recording, edit out the original ads, and replace them with new ads. You could do it yourself with $50 worth of audio editing software.

Same way YouTube shows adverts. Same way TV shows adverts. They stop the thing you’re watching, and play the advert instead for a bit. Then they restart the thing you’re watching.
