how are large weight measurements quantified?

I.E: when it is said that X or Y tons of trash has been picked up in a city in a year, the estimated weight of the Sun or large marine and land animals for instance, etc etc.

If you can determine the volume that something occupies and the density (at least approximately) of whatever occupies that area then you can estimate the weight of the object, with relation to the gravity most relevant to the body in question.
