Most of the film even dating back to the 1930s was done on cameras that could capture 4K resolution. But we never had a viewing device of any kind that could project that resolution onto a screen. When we finally did, that 4K film was just sitting on a shelf ready to be developed again. Video games are totally different. They have to be deliberately remade, with all brand new textures. They basically keep all the structure of the game but start from scratch with the visual asset library.
