How are stores or companies not running out of decades-old aged alcahol?

I was watching a video of Minecraft and the guy (jacksepticeye) was making a pub and mentioned “Vintage 1940 whiskey” and a question popped into my head, How are there still these types of alcoholic beverages that are these many years old from aging them, like, isn’t the demand high? how have they not run out of supply, or did they just like ALOT of these drinks many years ago?

They use price to control supply. The higher the price, the fewer they sell and the longer it lasts. And the less they have left, the rarer it is so the price goes up even more meaning they sell even less.

But eventually stocks do run out.
