How can an electric piano detect that you’re pressing a key lightly (and produce a softer sound), even if the key completes a full range of motion?

These types of keys are also known as Velocity sensitive. As the name suggests, they detect the speed of the key press.

This can be done by having two contacts per key. They’re physically arranged so that one contact is triggered before the other and it’s the time difference between triggers that allows the keyboard to know how fast the key was moving.
