Burning starches creates acrylamide. Acrylamide consumption has been linked to increased cancer risk in rats, though human tests have proven inconclusive. We do know that humans and rodents absorb and metabolize acrylamide differently, so at best we can call it a potential carcinogen until we have further data.
Well burnt stuff is poisonous at least, bc while cooking chemical processes appear to happen, like the so called maillard reaction which makes your fried chicken breast golden brown.
Now how Furan, one of the chemicals produced in burnt food, causes cancer, is not certainly sure, yet is clear whether it causes cancer for humans. Bit it definetly does cause cancer to animals that eat that chemical. Hope this helps you at least a bit.

but also bear in mind that the impact of something like eating a couple slices of burnt toast a week on your lifetime cancer risk is going to be extremely small, and that creates a problem, how do you identify like a .001% impact on something?
the answer is you have people fill out surveys listing what they ate that week, and then gather their medical records, and smash graphs together until two lines line up. then you put out a press release that eating hot dogs gives you colon cancer, and it ends up on buzzfeed and you get money, and that’s what science is all about.
