Cleaning action can be considered proportionate between soap concentration, temperature and duration.
You dish washer uses the same amount of soap, but less temperature so it needs to “soak” them for longer to get the same action.
Seeing as hearing the water takes a lot of energy and the pump takes much less, it is more economical to wash for longer at a lower temperature
In ECO mode, it uses less water than during a fast wash. It uses less energy but takes slower. A dish washer can reuse the water during the long wash.
To think of it a different way, if you drive 0 to 60 miles per hour in 4 seconds, you will waste a lot more gas than driving 0-60 MPH in 20 in 10 seconds as you are slowly building up to the speed. Or if you drive 0-30 MPH in 10 seconds, and stay at the 30 MPH speed, you will save more gas. So slower can save more energy, even if it takes longer.
