how can people fall pregnant if they miss one contraceptive pill?

So my understanding is that the pill prevents your body from releasing an egg and also prevents the uterine lining from accumulating until you take the inactive pills (which is why people can skip their period consecutively).

So how does can people fall pregnant simply by missing 1 pill? Does your body detect the lack of hormones so quickly that in that 24 hour gap, an egg is released?

Yes. It’s possible. The pill controls your hormone levels in the body, and missing one can cause your hormone levels to change just enough to trigger ovulation, or egg release.
