If phone storage devices can be made so small, why are we still using 2280 sized SSDs for computers?

Lots of answers here but here is something a little simpler.

Phones prioritize size, they use 1 single flash chip which is directly accessed by the CPU. This is slower but small.

Computer prioritize speed, they use multiple chips in parallel with a dedicated controller and DRAM memory for caching. Quite a few more chips involved here.

Lets see your phone do 5+GB/s transfer rates.
