In your case, it’s a matter of how much insulation the bag has. You usually don’t test the max rating of the bags, unless you really had a change of predicted weather. Some people camp in warmer weather and don’t need that extreme of a bag or are hiking and consider being a little uncomfortable is worth the weight savings.
