What do you mean? Do you just mean how do we see/hear? Or how can we imagine seeing something in our heads? Watching a movie doesn’t really use any different processes than seeing and hearing in real life.

Short version – all input processing is done in your brain. What you “see” with your eyes is actually happening in your brain. With or without your eyes, all the necessary processing ability exists to generate visualizations. Ergo, you don’t need eyes to “see” or ears to “hear”. It’s like having a computer without a monitor, except you’re the computer.
