Like r/Neither_Hope_1039 said, chameleons change colours based on emotional state, not their environment.
Octopuses, however, do change colour for camouflage. They are colour blind, but can literally ‘feel’ colour. To get technical, colours are light in various wavelengths, and octopuses can feel those wavelengths through chemicals in their skin (opsins). They then change their pigments to match those colours.
