How come if the same sound file is layered and played simultaneously you are able to depict different sound layers?

I would assume that if it is the same sound file being layered it would just sound louder.

Only if you “perfectly” synchronize playing the identical sound files over each other – then you’d probably expect just a louder but “same” sound. But if your layering is not perfect, then played with even a small time offset, the additions of the waves interact to form other sounds.
