CO2 used in the carbonation (bubbles) tastes sour, and it helps offset the amount of sugar in the drink.
Once all the CO2 has escaped, you’re just left with sugary water.

bubbles are a chemical reaction,. that reaction creates bubbles. bubbles bring whatever the drink is meant to taste and smell like to the surface. to your nose and your mouth
flat soda doesn’t necessarily taste bad. it doesn’t taste like what you are expecting (so bad)
It’s not “bad”, it’s just what soda is without the bubbles. Sugar water with weird chemicals to create some kind of taste in a lab.
