How come the Universe is structured by groups of matter called Galaxies? Shouldn’t it be chaotic and messy, and not held in groups and spirals?

It has to do with gravity I believe, but we don’t understand what causes gravity. Multiple theories but nothing proven yet. Gravity pulls in that chaotic mess to one point to form planets, stars, and such.
