How come the Universe is structured by groups of matter called Galaxies? Shouldn’t it be chaotic and messy, and not held in groups and spirals?

Gravity. Maybe it was chaotic and messy at the beginning but over time, all the random gas and dust and whatever particles started grouping together due to gravity and formed stars and solar systems and galaxies. Pretty sure even different galaxies have a slight gravitational pull on each other.
