When you warm up milk, the sugars and proteins start to caramelize (in cooking the reaction between sugars and amino acids in proteins is called the Maillard reaction), and the steam rising from the milk carries those pleasant smells up to your nose.

Oat milk has a slightly different set of sugars and proteins in it than cow’s milk, but they still go through very similar reactions when you warm that up – they start to go through those Maillard reactions and give off a very similar smell.
