how did composers compose music for orchestra hundreds of years ago?

Did they come up with a melody and think ‘this will sound great on a violin’? Or did they have a whole orchestra at their disposal when they composed?

Probably years of studying what sounds best from what instruments, you can write a good song without hearing it if you really know what you’re doing (Adam Neely has a video where he does that)
