How do airlines choose who to upgrade on their flights?
Will they always upgrade to fill empty seats upfront?

I can tell you who cannot get an upgrade: anyone with special food requirements unless a no-show had ordered the same special food. So for certain airlines it is a gamble: order kosher and get a much better meal than regular economy “chicken or pasta” – or hope for an upgrade.
